If you’re gonna make something unhealthy, why not step it up and make it even worse?! Or as I like to think, even better..
I don’t like my brownies too sweet, so I cut back on the sugar content to offset the sweetness of the Dulce de Leche, but if you like sickly sweet, then be my guest and pack that sugar in. These brownies can be eaten as is, or serve with some good vanilla ice-cream and some heated Dulce de Leche drizzled over the top. Good times.
- 145g unsalted butter
- 1 cup raw granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1/4 tsp salt
- 2 tsps vanilla extract
- 2 large eggs, cold
- 1/2 cup plain flour
- 2/3 cup crushed walnuts
- 1 cup dulce de leche
Pre-heat over to 180°C and place rack in lower third of oven. Oil and line a 20cm square baking pan (or whatever shallow baking dish you have) with baking paper. Add enough water to come up 3 inches in a small saucepan that will allow a heatproof bowl to sit snugly in it. Ensure the water is not touching the bottom of the bowl. Bring the water to a low simmer and sit the heatproof bowl over the top. Combine butter, sugar, cocoa and salt in the bowl.
Spread half the mixture evenly into baking pan. Add half of your dulce de leche over the brownie mixture.
Pour your remaining brownie mixture evenly over the top. Add remaining dulce de leche in dollops and swirl through again with a knife. Bake for 20-25 minutes in pre-heated oven or until skewer inserted comes out almost clean.
