Garden Basil Pesto

We have a beautiful basil plant on our back patio, and awhile back I decided to put it to good use and make some fresh pesto. Pesto is super easy, and the amounts can be changed as per preference, but here is what we did:

1 cup fresh basil, washed

1/3 cup EVOO (and then some, to thin in out)

1/4 cup walnuts (much cheaper than pine nuts, and still delicious!)

1/4 cup parmigiano reggiano, grated

2 cloves garlic

salt & pepper to taste

Blend everything up, making sure to scrape down the sides of the blender often to achieve consistency. We added more EVOO because we prefer a slightly thinner pesto, but adjust this as you wish! Also wonderful topped with a squeeze of lemon. Delicious on so many things- pasta, eggs, sandwiches…we used ours in a risotto, which is coming soon!
