Making gyros at home is crazy easy, especially when you cheat a bit and use store bought marinated chicken. We really enjoy Trader Joes’ sundried-tomato marinated chicken breasts- they are full of flavour and hold up great on the grill. The only component that actually requires work aside from the chicken is the tzatziki sauce. We made this at home using greek yogurt, diced cucumber, salt, pepper and plenty of dill.
Once the chicken was done, we piled up a flour tortilla with spinach, tzatziki, tomatoes, onion, chicken, freshly grated cheese, and sambal olek (for heat). It’s a simple, delicious and healthy meal that takes no more than 15 minutes to put together- perfect for hot summer days when you’re too lazy to do anything more difficult than grill, but want something a little different!
