Sweet Potato Fries

Simple but delicious, these little beauties will have you coming back for more. When you deep fry the sweet potato if the oil is hot enough and you drain them thoroughly after they are cooked they aren’t even that bad for you. Here’s how it goes. Cut the sweet potatoes into any size you want, I went for a reasonably standard size chip.

I also cut up some rosemary to sprinkle on the freshly cooked fries… Oh and leave the skins on, it holds them together and keeps the nutrients in.

After slicing the sweet potatoes soak them in a bowl of iced water, this will help them stay tender in the middle and crisp on the outside after cooking.  Soak them for about 20 minutes.

While this is happening you can heat up your oil. After about 20 minutes drain your sweet potato fries thoroughly and pat dry as if there is any moisture it will spit and or the oil will foam over and this can be dangerous.

Now time to fry! Fry the sweet potato over high for approximately four minutes and then lift them out to allow the oil to heat back up to temperature. This will stop too much oil getting in to the fries and it will also get them extra crispy.  When the oil has re-heated again put them back in for another minute or so until nice and crisp.

Drain the fries thoroughly, there’s no point in being more unhealthy than you need to be.

Season and serve. I added salt and chopped rosemary.

I served my sweet potato fries with lamb chops and wilted spinach, but they are just as good on their own.
