Mexican Fiesta!

A couple of weeks ago I organised a Mexican themed Sunday lunch.  I employed several helpers to get the show on the road.  The menu for the day was a starter of corn and a main of tacos, pork and chicken.  The day before a friend and I prepared the pork and the chicken, which we slow cooked.  We followed recipes from Rick Bayless, to get that traditional flavour.  No Mexican themed day would be complete without Margaritas, our recipe was – two shots of tequila – one shot of Cointreau – one shot of lemon juice mixed and poured over ice in a salted rimmed glass.  During the day a friend brought around some strawberries and we added these to the mix with some ice in a blender and had blended strawberry margaritas too.
