I have been getting sick of eating toast for breakfast every morning, so I decided to make granola. I didn’t have my camera on me, so the iPhone was the only option. It is pretty straight forward to make. Firstly I put a generous amount of honey in a pot, some golden syrup (as I did not have enough honey) and half a nob of butter. I melted this together and added as many whole oats or porridge as I had in the cupboard. I mixed this through so it was all coated and spread it on a baking dish and put it into the oven to cook. When it was brown and looked cooked through, about 10 minutes, I put it on a marble bench top to cool. I then toasted all the other ingredients, – coconut – sesame seeds – slivered almonds – macadamia nuts – walnuts – pepitas; making sure not burn any of them as it is easily done. I combined all of the ingredients on the bench top and allowed to cool and become crispy. I then added the fruit, which in my case was raisins, dried cranberries and sultanas, but any dried fruit can be added. Just don’t add anything too moist as it will make the granola lose its crispness. You could add pretty much anything you want to granola, so experiment! I was thinking for a less healthy option some chunks of dark chocolate would be great. I’ve been eating it for breakfast with greek yoghurt, delish! It’s also much healthier than bread and keeps you full until lunchtime.
