Yesterday I bought some brie cheese on a whim, and was kind of disappointed with how mild slash borderline flavourless it was. So today I decided to use it all up in one go- I’ve been wanting to make brie quesadillas for awhile, and when I walked past the vegetable stand and saw some mangoes, it all came together. I started by caramelizing some very finely sliced onions, throwing in half of a red chili at the very end. Dicing brie was just as difficult as it sounds, so I kind of just ended up smearing it on the tortilla.Then I sliced the mango into thin pieces, and arranged them on top of the brie bits.
After this I evenly spread the carmelised onions on top, and added a bit of the Smoked Paprika, Chipotle Chilli and Lime paste I used in the Guacamole with Roasted Tomatoes for a bit of flavour. If you can’t find this, some chili oil blended with paprika and lime will work as well.
Then i folded over the tortilla and popped it in the oven at 425 degrees (F). After about six minutes the quesadilla was bubbling, with bits of cheese oozing out nomnomnom. I garnished it with some fresh cilantro, as per usual, and proceeded to eat the whole thing in a matter of minutes. The combination of the mild brie, tart mangoes and crunchy onions was delicious- my only wish was that I had picked a less ripe mango, because it went a little mushy when it was cooked. A greener mango would have held its texture better, as well as provided the quesadilla with more tartness. However, on the whole it was an incredibly easy, filling and delicious take on an old favourite.
